Guadalajara, Mexico – The city's culinary scene has a new buzz with the opening of "Parlante," a restaurant co-owned by popular internet personality Yuya and musician Siddhartha. Food reviewer Christopher Basteris recently visited the establishment, sharing his detailed experience and initial impressions. Basteris described the restaurant's aesthetic as "cabrón" (impressive) and praised the overall ambiance and clientele. The menu, he noted, focuses on seafood and tacos, but with a distinctive "tapatío" twist. Among the dishes sampled were the Aguachile Bichi with chiltepin, which Basteris found beautifully plated, saying, "It seemed like Yuya designed these platings, they are so beautiful." However, he felt it "lacked something to be a differentiator" and needed more salt. The Aguachile de Atún, flambéed with toasted chili sauce, received higher marks for its flavor. Basteris particularly enjoyed the sauce, describing it as "creamy, I think it has like peanut or something, it's very good." He also tried the "Papas Veneno" (poison potatoes) served in a creamy aguachile sauce with cheddar and truffle oil, exclaiming, "It literally smells like a dream... it's too, too delicious." Despite the richness, he again noted a general need for more salt in the dishes, humorously remarking, "I think salt is expensive here in Guadalajara." The taco selection included the Tabernero with fried octopus and bone marrow, the Mexicoreano with golden short rib and kimchi salad, and the Sonora with machaca de res. Basteris highly recommended the Machaca taco, stating, "This is the best of everything I ate, it's spectacular." He concluded by emphasizing that beyond the food, the restaurant's atmosphere makes it a must-visit in Guadalajara.
