Kyiv, Ukraine - Chef Kateryna Mazurenko, known from 'MasterChef 13', recently shared her secret to perfectly juicy shashlik, a popular grilled meat dish. In a video tutorial, Mazurenko demonstrated a simple yet effective marinade recipe, emphasizing the importance of selecting pork neck with medium fat content and cutting it into substantial pieces, approximately 60-70 grams each. The marinade includes grated onion, salt, freshly ground black pepper, crushed garlic, lemon or lime juice, and Greek yogurt. "Lemon or lime juice will make the meat softer, but be careful! The longer you marinate the meat, the less lemon juice you should use," Mazurenko advised. She also highlighted that Greek yogurt adds tenderness and a creamy flavor to the dish. The meat is recommended to marinate for two to three hours. For grilling, Mazurenko shared a crucial tip: "Sprinkle salt on the coals; then the heat will be distributed evenly, and no flames will occur, so your meat will not dry out or burn." The shashlik is grilled for 15 minutes, with skewers constantly turned to ensure even cooking. The video concluded with Mazurenko enjoying the succulent shashlik, garnished with fresh onions and herbs.
