Elche, Spain – A local butcher from 'La Madurada' has shared a surprising culinary tip that challenges common cooking practices for meat. In a recent video, the expert advised against using vegetable oil when cooking meat, suggesting that it can detract from the meat's natural taste. According to the butcher, vegetable oil, being a plant-based fat, is fundamentally different from animal fat. He explained, 'If you cook it with oil, if you realize, oil is a vegetable fat, and this is animal. So, one flavor is totally contrary to the other. What happens is the flavors are killed.' Instead, he recommends using a small piece of animal fat, ideally from the same type of meat being cooked, such as beef or veal fat. The fat should be rendered on a hot griddle, and the meat then cooked in the resulting animal oil. 'This will not only give you the flavor of the meat but will enhance its flavor even more,' he stated. The butcher concluded his advice by encouraging viewers to 'forget about oil and cook meat as God intended,' emphasizing the importance of using animal fat to truly bring out the best in the meat.
