The technique, which the author asserts allows the tomatoes to remain unspoiled for years, offers a practical approach for individuals seeking to extend the shelf life of their garden produce. The recipe details a multi-stage process. Initially, fresh tomatoes are thoroughly washed, halved, and their cores meticulously removed. These prepared tomato halves are then carefully arranged and packed into sterilized glass jars. A vibrant green mixture, comprising chopped bell pepper, garlic, and fresh parsley, is prepared using a food processor and layered over the tomatoes in each jar. For the crucial brine, 1.5 liters of water is brought to a boil, infused with two bay leaves, peppercorns, 1.5 tablespoons of salt, and three tablespoons of sugar. Once boiling, this hot brine is poured over the jar contents. A final touch involves adding one tablespoon of 9% vinegar to each jar before they are securely sealed with new lids. The preservation concludes with pasteurization. The sealed jars are placed in a deep pot lined with a cloth, filled with lukewarm water up to the lid level, and then brought to a boil. They are pasteurized for 20 minutes at 80 degrees Celsius (176°F) from the moment the water begins to boil. Following this, the jars are left to cool gradually within the pot before being transferred to a dark, cool storage location. This method aims to provide a natural and durable way to enjoy fresh-tasting tomatoes throughout the colder months.
