
Gniezno's 'Feast of the Brave': A Culinary Journey Through History
Gniezno, Poland, is celebrating the 1000th anniversary of Bolesław Chrobry's coronation with a unique culinary project. The "Feast of the Brave" initiative has seen several local restaurants add traditional Piast-era dishes to their menus. "We're using ingredients and cooking methods from that time," explains Wojciech Gubański, a chef participating in the project. "It's a way to connect our history with our gastronomy." The dishes feature traditional ingredients like cumin and rosemary, and meats are marinated in brine and rubbed with herbs. Joanna Pietrak-Lipińska, director of a hotel and restaurant chain in Gniezno, adds, "It's a way to experience history through food—something that touches the heart through the stomach." The culmination of the project is a large outdoor feast planned for the upcoming Sunday. This event offers a fascinating blend of historical recreation and modern culinary creativity, showcasing Gniezno's rich heritage and vibrant culture.
