A recent video by barista Jimmy Johnson highlights a unique coffee concoction: banana coffee. This beverage, gaining traction for its distinctive flavor profile, is presented not merely as a modern trend but as having roots in a mid-20th century public health initiative. According to Johnson, the concept of combining bananas with milk originated in South Korea during the 1970s. Faced with widespread malnutrition, particularly a lack of milk consumption, a dairy company named Binggrae introduced banana milk. The strategy was to make milk more appealing by pairing it with a "rare and expensive fruit" like the banana, thereby encouraging its intake. The video demonstrates the preparation of this unique coffee drink, which involves blending bananas with milk to create a creamy base, then combining it with espresso or strong coffee, and topping it with a cold foam. Johnson asserts that the banana milk helps to "balance out the natural bitterness and acidity" of coffee, resulting in a "healthy, sweet coffee drink." He enthusiastically concludes, "Best thing I've ever made. I could eat that cold foam like ice cream, man." This blend offers a novel approach to coffee enjoyment, integrating a historical solution to a nutritional challenge into contemporary beverage culture.
