The recipe, designed to be both delicious and nutritious, incorporates an unexpected ingredient for an added protein boost: blended cottage cheese. Austin's method begins by blending 1 1/3 cups of cottage cheese with a splash of water until it achieves a smooth, creamy consistency. This innovative step replaces traditional higher-fat bases while maintaining a rich texture. The blended cottage cheese is then combined with 2 cups of shredded chicken, 1 cup of mozzarella, 1/2 cup of buffalo sauce, 1 tablespoon of ranch seasoning powder, and a dash of onion powder, garlic powder, and salt. The mixture is thoroughly combined before being transferred to a baking dish. For the topping, the dip is generously covered with 1/2 cup of Mexican cheese blend, additional mozzarella, and 1/3 cup of panko breadcrumbs, which contribute to a satisfying texture.
