To begin, two medium zucchinis are sliced lengthwise, salted, and left for ten minutes to release excess moisture. In separate bowls, four eggs are whisked, and four tablespoons of flour are combined with one teaspoon of smoked paprika and one teaspoon of salt. The zucchini slices are then dipped first into the flour mixture, then into the beaten eggs, and fried on both sides until golden. Excess oil is blotted with a paper towel. For the savory filling, 200 grams of hard cheese and one processed cheese are grated and mixed with two tablespoons of sour cream, one to two cloves of minced garlic, and fresh dill. Once the fried zucchini slices have cooled, each is spread with about one teaspoon of the cheese filling, topped with a tomato slice, and rolled up. The finished rolls are then refrigerated for 30 minutes to an hour to help them set. The author notes that for a healthier option, the zucchini can be grilled or baked instead of fried.
